Makes 12
  • 1 ¾ cups all purpose flour
  • ½ cup sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 1 egg
  • 1 egg white
  • 1 cup mashed orange kumara
  • 2 Tbsp Golden syrup
  • ½ cup buttermilk

In a large mixing bowl. Combine the flour, sugar, baking powder, baking soda, cinnamon and nutmeg. In a small bowl, mix together the egg, egg white, kumara, golden syrup and buttermilk. Make a well in the centre of the dry ingredients and add the egg mixture, stirring just until well moistened.
Transfer batter to prepared muffin tins and top with crumble topping. Bake for 15-20 minutes or until muffins are lightly browned.

  • ¼ cup light brown sugar
  • 2 Tbsp all purpose flour
  • 1 Tbsp Margarine melted
  • 1/3 cup oatmeal
  • 1 tsp vanilla
  • ½ cup chopped walnuts (optional)
Mix together until crumbly.
