Kumara & Mandarin Damper

Makes 2 Standard Loaves
  • 3 ½ cups all-purpose flour
  • 2 cups sugar
  • 1 tsp baking powder
  • 1 tsp cinnamon (ground)
  • ½ tsp salt
  • 4 large eggs
  • 1/4 cup mandarin juice (saved from tin)
  • 1 cup vegetable oil
  • 1 cup of cooked mashed kumara (mashed with knob of butter and 2 tsp mandarin juice)
  • ½ tin of finely chopped mandarin segments, drained (save juice)
  • ½ cup of chopped bacon, lightly cooked.
Preheat oven to 180°C. Spray 2 loaf pans.
In a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon & salt.
Add eggs, mandarin juice and oil; beat at a low speed with an electricmixer until smooth.
Stir in kumara, mandarin juice and bacon. Pour batter evenly into greased pans.
Bake for 45 minutes - 1 hour, or until a skewer inserted comes out clean.
Cool in pans for 10 minutes.
Remove from pans, and cool completely on wire racks.
