Spicy Kumara Mini Loaves

Spicy kumara mini loaves 1
Serves 6:
Ingredients:
  • 6 little Rubies, peeled 
  • 1 cup packed brown sugar 
  • 1 cup apple juice 
  • ½ cup raisins 
  • 1 Tbsp vegetable oil 
  • 1 tsp ground cinnamon 
  • ½ tsp ground nutmeg 
  • ¼ teaspoon ground allspice 
  • 2 cups self raising flour 
  • 1 tsp baking soda 
  • ½ tsp baking powder 
Method:

Preheat oven to 1800C.
In a large saucepan, cook Little Rubies in hot salted water until tender. Drain and beat with electric beater on med speed until smooth.
Add brown sugar, apple juice, raisins, oil, cinnamon, nutmeg and allspice to the pot. Beat together and bring to a boil over high heat. Lower heat and simmer for 5 minutes. Set aside to cool.

Sift together flour, soda and baking powder.
Add to the cooled Kumara mixture; stir well. Spoon batter into greased mini loaf pans.
Bake for 20 minutes or until a wooden pick inserted into center comes out clean. Cool in pans for 10 minutes then turn out and transfer loaves to wire rack to cool completely.

Makes 6 mini loaves
