Kumara and Vegetable Filos![]() Serves 18Ingredients:
Method:Preheat the oven to 180 deg C, Spray 12 hole muffin tin. Divide pastry sheets into 2 (two sheets thick) and chop into 9 even squares. Press into tins. Chop potato and carrot into small cubes, put into a pot. Add peas, corn kernels, finely chopped broccoli florets and boil until just cooked. Meanwhile in a bowl, add flour and milk then mix until just combined. Add eggs one at a time, mixing well after each addition. Add Kumara to other vegetables and toss carefully to combine. Divide mixture evenly between pastry cases and bake for 15-20 minutes until fully cooked. Serve warmed. |
