Kumara and Vegetable Filos

Serves 18
  • 1 1/2 Cup Kumara, cooked and mashed
  • 1 Potato
  • 1/4 cup peas (optional)
  • 1/4 cup corn kernels
  • 1/2 cup Broccoli Florets
  • 1 small carrot
  • 2 eggs lightly beaten
  • 1/2 cup flour
  • 1/2 cup milk
  • shake of salt and pepper
  • Filo Pastry (4 sheets)

Preheat the oven to 180 deg C, Spray 12 hole muffin tin.
Divide pastry sheets into 2 (two sheets thick) and chop into 9 even squares. Press into tins.
Chop potato and carrot into small cubes, put into a pot. Add peas, corn kernels, finely chopped broccoli florets and boil until just cooked.
Meanwhile in a bowl, add flour and milk then mix until just combined. Add eggs one at a time, mixing well after each addition.
Add Kumara to other vegetables and toss carefully to combine.
Divide mixture evenly between pastry cases and bake for 15-20 minutes until fully cooked. Serve warmed.
