Crunchy Baked Kumara - With Avocado Salsa

Serves 2
Ingredients:
  • 6-8 little rubies Kumara
  • ¼ cup crushed cornflakes
  • 1 Tbsp dry breadcrumbs
  • 2 Tbsp Raw sugar
  • 1Tbsp flour
  • ½ tsp Salt
  • 1 eggs
  • 1 Tbsp water
Method:

Boil washed kumara until soft when poked with a sharp knife.
Mix together the cornflakes, breadcrumbs, sugar, flour and salt.
In a separate bowl lightly whisk the egg and water together.
Dip cooked kumara into the water and egg mixture then into the coating mixture.
Bake with a little olive oil in a hot oven for 20 minutes or until golden brown.

 

Serving Suggestion:
Avocado Salsa

Ingredients:
  • 2 avocados
  • 2 Tbsp lemon juic
  • 2 Tomato
  • 1 red onion
  • 2 rashers bacon – cooked and diced
  • Salt and pepper to taste
Method:

Slice up the tomato and avocado into small cubes. Mix the avocado and lemon juice together.
Finely chop the red onion then toss all ingredients together.
