Ingredients:

2 Tbsp olive oil

2 Tbsp butter

2 red onions peeled and diced

8 rashers rindless bacon diced

4 large kumara
-
6 cups chicken or vegetable stock

1/4 cup sour cream

salt & pepper and chives
Method:
In a large saucepan sweat the onions in oil & butter until softened but not
coloured. Remove onion from saucepan, and then add bacon. Fry until cooked
through and a little crispy. Place onions, bacon, kumara & stock into saucepan
and bring to boil. Simmer gently until kumara is very tender. Add sour cream
and season with salt, pepper and chives. Puree.
