Maple Kumara Bites

Ingredients:
  • 400gm Rubies kumara
  • chopped into peices
  • Lightly salted water for boiling
  • 2 rashes of bacon or as desired
  • Maple Syrup
  • Butter for frying pan
Method:
Put chopped Kumara into lightly salted water. Bring to the boil.
Boil until cooked but still slightly firm to touch with poked lightly with a sharp knife. Drain.

Put peices of kumara in one payer in the pan. Add a good amount of maple syrup and butter and fry. Continue the process until all kumara is fried.

Remove all kumara and add more butter and maple syrup to the pan, this is the “dressing”. Add the bacon to the dressing and fry until crispy. Drizzle fried bacon and dressing over the kumara.

Can be served immediately or placed in the fridge once cool. Cover with tinfoil to reheat.
