3 large kumara
¾ cup breadcrumbs
2-3 rashers bacon - finely diced
Juice from 2 oranges
4 Tbsp butter - melted
Peel kumara and slice into large wheels, boil in a pot until soft and cooked.
Place kumara on an oven tray or BBQ and drizzle with orange juice. Prick the kumara
to allow the juice to soak in. Mix together melted butter, breadcrumbs and
bacon. Stack on top of the kumara.
Bake/BBQ Kumara for 15-20 mins or until crispy and golden.
