
Ingredients:

6-8 Little Rubies Baby Kumara

2 Tbsp sour cream
-
1 ½ tsp wholegrain mustard

1 piece of bacon, cooked and finely chopped

Salt and pepper to taste
Method:
Boil the Little Rubies until tender when poked with a sharp knife.
Slice one end of the Little Rubies so it stands up.
Slice off a “lid” from the other end of the Little Rubies and set aside.
Remove the centre of the Little Rubies and mix together with all other ingredients.
Fill Little Rubies with mixture and place lid on top.
Bake in a moderate oven, for 10 – 15 minutes or until heated through.
Garnish with parsley and extra bacon.
