Beef & kumara Lasagne
Small Pack of Mince
1/2 Cup Grated Carrot
1 Cup Kumara, Cooked and mashed
3/4 Cup Flour
1 Cup Milk
1 Cup Grated Cheese
Salt and Pepper
Fry Mince, grated carrot and grated kumara in the frying pan with 2 Tbsp olive oil and 1 Tsp Salt. Cook, turning often, for 20 mins. Add thickening (1/2 Cup water & 2 Tbsp Flour - put into a shaker and shake to mix) Preheat oven to 180 Deg C. Grease a 30x25cm (base) dish.
While mince is cooking, make cheese sauce.
Melt butter in a pot over medium heat, add flour and mix well. Return to heat and add 1 cup milk and whisk until all combined. Keep whisking until boiling. Remove from heat and add grated cheese and stir well. Add Salt and pepper, set aside.
In a prepared dish, pour 1/4 of the mince mixture into the bottom. Cover with 1 layer of lasagne sheets. Top with 1/4 of the cheese sauce. Repeat this twice. Cover with extra cheese and sprinkle with parsley if desired. Bake in hot oven until browned and boiling.
