Spicy Kumara Wedges

Spicy kumara wedges  2
Serves 2:
Ingredients:
  • 12 Little Rubies
  • 2 tsp ground cumin
  • ½ tsp paprika
  • 1 tsp salt
  • freshly ground pepper
  • 2 Tbsp olive oil
Method:

Preheat oven to 2000C. Peel the Little Rubies & cook in a pot of hot salted water until tender.
Cool.
In a bowl mix all other ingredients together. When the Little Rubies have cooled down, dice into ¼’s and place them into the bowl with the seasoning mixture.
Toss well, then arrange in a single layer on a well greased baking tray. Cook in the oven for 20 – 25 minutes or until crispy and golden. Serve with sour cream.
