Roasted Rubies with Red Onion Dressing

Serves 4
Roasted Kumara:
  • 6-8 Little Red Rubies
  • Olive Oil for Roasting

Method:

Preheat Oven to 180 Deg C.
Scrub Little Rubies with a soft cloth. Cut a deap cross in the top of each Kumara.
Toss Kumara in a little Olive Oil. Season with Salt and Pepper.
Place in a roasting dish and roast for 30 min or until tender. Set Aside.

Red Onion Dressing:
  • 1/2 Cup of Sour Cream
  • 1 Tbsp Wholegrain Mustard
  • 1/4 Medium Red onion, Finely Diced
  • 2 Tbsp Chopped Flat Leaf Parsley
  • Salt and Pepper to taste
Method:

Combine all Dressing ingredients.
Serve with the bakes rubies either to the side or mixed through.
