Summer Creamy Kumara SaladIngredients:500g Rubies Kumara, Chopped into Peices5 Eggs, Boiled 6 Rashes Streaky Bacon, fried and diced 2 spring onions, Chopped 1/3 cup Aioli Method:Put Chopped Kumara into lightly salted water. Bring to the boil. Boil until cooked and soft to touch when poked lightly with a sharp knife. Drain. Chop eggs into peices. Once all components are cool, combine and toss with the aioli. Enjoy as a delicious side for your next summer BBQ. Serves 4 |
