Kumara_Souffle

Serves 4
Ingredients:

  • 6 Medium Kumara
  • 90gm Butter
  • 125gms Grated Cheese
  • 1/4 cup Snipped Chives
  • salt and pepper
  • 4 eggs, seperated
  • Extra 2 tbsp grated cheese

Cook Kumara in boiling salted water until tender. Drain them and mash with butter and a little salt and pepper. Add the 125g grated cheese and chives. Add the egg yolks one by one. Beat the egg whites until stiff. Fold the beaten egg whites thoroughly through the kumara mixture. Put into a greased ovenproof deep pie dish and sprinkle with extra cheese. Bake in a preheated moderately hot oven 190 deg C for 30-35 minutes or until puffed and golden.

Enjoy! Great for lunch in the winter months.
