Classic Kumara Soup

Serves 8
Ingredients:
  • 1 Tbsp olive oil
  • 1 leek chopped
  • 1 garlic clove crushed
  • 1.25kg Orange Kumara
  • 2 cups vegetable stock
  • 2 cups water
Method:

Chop kumara into 2cm sized pieces.
Heat oil in large saucepan over medium heat. Add leek and garlic. Cook, stirring, for 5 minutes.
Add Kumara, stock and water. Cover. Cook for 20-25 minutes or until Kumara is tender.
Blend soup in batches. Return to saucepan. Heat over medium heat until hot.
Season with salt and pepper.
