Curried Kumara Apple Soup

Serves 8
Ingredients:
  •  
  • 2 Large Beauregard Kumara
  • 1 Large Tart Apple
  • 1T Olive Oil
  • 1 Large Onion, Coursely Chopped
  • 2-3 tsp Curry Powder
  • 1 3/4 Cups Vegetable Stock
  • 1 3/4 Cups Apple Juice
  • 3/4 tsp Salt
 
Serving Suggestions:
  • Plain Low Fat yoghurt
  • Kumara Chips
  • Sour Cream
  • Croutons
Method:

Peel Kumara and Apple and boil until tender. Cool.

Meanwhile, in a large saucepan over medium heat, heat the oil. Add onions and curry powder. Cook and Stir until onions begin to brown. (about 5 mins)

Add Vegetable stock, bring to the boil, reduce heat to low and simmer for 5 minutes. Transfer vegetable stock mixture to the bowl of the food prosessor. Add Kumara and Apple to food processor. Add salt and process until very smooth, gradually adding the apple juice.

To reheat, use medium heat and do not boil. Serve with yoghurt, kumara chips, sour cream or croutons.
