Little Rubie and Apple Pie
Method:Preheat the oven to 2000C. Line a pie dish with the pastry. Set aside.
Peel the Little Rubies and cook in a pot of hot salted water until very soft.
In mixing bowl, combine flour and cinnamon; blend in sour cream. With electric mixer at medium speed, beat in little rubies.
On high speed mix in the egg, sugar and vanilla until smooth.
Fold in pecan pieces and apple slices. Pour into prepared pastry shell.
Bake for 25 to 30 minutes or until set.
Serve just warmed and garnish with whipped cream.
