Sweet Kumara Pie
Serves 8Ingredients:
Method:Spray a 9inch pie pan. Press pastry into the pan. Preheat oven to 180 deg C. In mixing bowl, beat together mashed Kumara, margarine, egg, brown sugar, cinnamon, nutmeg, evaporated milk and vanilla until creamy and slightly thickened. Pour mixture into the pastry lined pan. Bake for 40 minutes or until set. Alternatively for individual pies, cut rounds of pastry and press into muffin tins. Pour in the Kumara mixture and bake for 30 minutes or until set. |
