
Ingredients:

1 cup wholemeal flour

1 cup flour

2 cups coarse brown sugar

2 tsp baking soda

½ tsp salt

2 tsp ground cinnamon

1 cup cooking oil

4 eggs

3 cups grated beauregard kumara.
Icing Ingredients:

150g cream cheese
-
100g butter
-
2 cups icing sugar
-
2 tsp vanilla extract
-
1 round tsp ground cinnamon

1 tsp grated lemon rind
Method:
Sift and mix dry ingredients.
Add oil, stir well. Stir in eggs and grated kumara.
Bake in 180°C for one hour.
Make the icing by beating the butter and cream cheese
until light and fluffy. Beat in the icing sugar. Add vanilla
extract and lemon zest.
Ice cake once cooled.
